I've got a little something scrumptious for your weekend breakfast!
Ever had a Finnish pancake?
We usually have it on Christmas morning, but as we've been getting more eggs recently, it's been frequenting our plates more often :)
Finnish Pancake
Preheat oven to 425F.
In a 9x13 dish, melt
1/2 cup of butter
in the oven as it heats up.
When it sizzles, remove from oven.
In a blender, combine
5 jumbo eggs (or 6-7 regular),
1 cup milk,
1/4 cup orange juice,
1/2 cup sugar,
1 cup all-purpose flour,
1/4 tsp salt.
Pour blended batter into the dish and bake for 18-20 minutes, or until puffed and brown.
Top with powdered sugar, if desired.

It's also yummy with a side of bacon or sausage...the flavor of the meat cuts the richness of the pancake.
Have a cuppa tea or coffee, and a bowl of fruit, too :)
For gluten-free eaters, try an alternative flour or mix. If you use coconut flour, it will probably work best to use 1/4 - 1/3 cup of flour.
P.S. Don't forget the flour...you can't tell in the photos, but for this pancake I did...definitely makes a difference in the texture...hehe.
